March Family Dinner Night – Gumbo

Terese Allen Bio:
A Wisconsin native and former chef, Terese writes about the pleasures and benefits of regional foods, seasonal cooking, and culinary folklore. She has written several books on Wisconsin’s food traditions, including the newly published second edition of The Flavor of Wisconsin, Wisconsin’s Hometown Flavors, Fresh Market Wisconsin, Cafe Wisconsin Cookbook, and The Ovens of Brittany Cookbook. A food columnist for Isthmus and a former contributing editor of Wisconsin Trails magazine, Terese is also food editor for Organic Valley, the country’s largest organic farmers’ cooperative. She chairs southern Wisconsin’s groundbreaking REAP Food Group and is a founding member and past president of the Culinary History Enthusiasts of Wisconsin (CHEW).
Terese Allen on Gumbo:
“I’m fascinated by foods that taste like, and reflect, the place they come from–and gumbo is one that tops my list of favorite expressions of local flavor. Gumbo reflects Louisiana cooking so well– it’s as lusty, spicy, jazzy, informal and delicious as the French Quarter itself. There must be a thousand variations of New Orleans’s famous stew by now, but through the years I’ve stuck with a method learned in Chef Paul Prudhomme’s Louisiana Kitchen. It has never let me down. My version features Wisconsin products like dark beer and sausage (or local vegetables) but retains enough Creole spunk to toast your taste buds. At the Slow Food UW gumbo dinner on March 25, we’ll learn gumbo basics and make several different kinds to share.”
